Soup – Mushroom Soup
Sunday – Easter Dinner Ham with Pineapple Sauce for Ham (I don’t use the raisins). I like to serve ham with this Mustard Sauce. Scalloped Potatoes are also on the menu and I’ll be trying Roasted Corn (scroll down the blog link to see the directions.) I’m also going to roast some asparagus with a little olive oil, fresh lemon juice, salt and pepper and then sprinkle it with blue cheese before serving. For dessert, we will have the traditional Lemon Meringue Pie

Tuesday – Almond-Baked Chicken
Wednesday – More leftover ham… Broccoli, Mozzarella Ham Bake
Thursday – Hearty Tuna Casserole
Friday – Tim’s Night to Cook
Saturday – Lis and Bryan for Dinner – Strawberry Lemonade with Tequila and Carmelitas for dessert
