Mushroom Gravy

1/4 ounce dried mushrooms

Soak mushrooms in 2 cups of room temperature water for 1 hour or more.

Drain mushrooms using a coffee filter and sieve.  Squeeze mushrooms.

Rinse mushrooms and squeeze again.

Cook 1 tablespoon fat and 1 tablespoon of flour in roasting pan.  Add mushroom liquid and cook until thickened.  Chop mushrooms and add them to gravy.

Season with salt and pepper.

Beef and Sprouts

I’ve adapted this recipe from a Company’s Coming cookbook… I’ve had it in my files for awhile so I don’t know which one of their books it is from.

I like to buy ground beef in large (2kg) packages and then cook it all up at once and then divide it into 4 equal portions and freeze it like that.  It makes getting dinners like this one on to the table quicker!  I’ve also been sauting a whole bag of onions at once and then freezing them in the silicone muffin tins.  When they are frozen, I pop them out of the muffin tin and stick them in a freezer bag and they are ready for when I am making soup or a casserole.  I do the same thing with celery.

I usually serve this recipe with brown rice.

Baked Broccoli Macaroni and Cheese

Early this week, I made Baked Broccoli Macaroni and Cheese from the Gina’s Skinny Taste website.  The recipe needs some tweeking for our tastes.  We liked the flavour as it reminded us of Cream of Broccoli soup, but it was a bit runny.  The next time I make it, I think I’ll look at some of my other light Macaroni and Cheese recipes and see what I can do with this one.

Edited to Add:  We’ve know eaten this casserole after it has been frozen and we like it more than the “fresh” version!  Don’t ask me why!  I don’t think I’ll be changing anything with this recipe… except perhaps making it a day ahead so it can sit before I bake it!

Shrimp Fried Rice

Tonight we made Shrimp Fried Rice that was posted by Tammy on the Skinny Mom’s Kitchen blog.  My husband and I both enjoyed it, but we didn’t find that it was enough.  I’m not sure what else I would serve with this dish so the next time I try it, I think I’ll try adding 1/2 shredded carrots and 1 cup of snow peas and 1 cup of mushrooms and see how that tastes.  My idea for adding those vegetables comes from another fried rice recipe (Steak & Shiitake Fried Rice) that I have made in the past. I plan on posting that one once it comes up in our meal rotation. 

I notice in the picture on the blog that there are green peas in the dish, but they are not in the recipe… that might be a consideration too!
