Shrimp Fried Rice

Tonight we made Shrimp Fried Rice that was posted by Tammy on the Skinny Mom’s Kitchen blog.  My husband and I both enjoyed it, but we didn’t find that it was enough.  I’m not sure what else I would serve with this dish so the next time I try it, I think I’ll try adding 1/2 shredded carrots and 1 cup of snow peas and 1 cup of mushrooms and see how that tastes.  My idea for adding those vegetables comes from another fried rice recipe (Steak & Shiitake Fried Rice) that I have made in the past. I plan on posting that one once it comes up in our meal rotation. 

I notice in the picture on the blog that there are green peas in the dish, but they are not in the recipe… that might be a consideration too!
